Nendram Palam Chips/Banana Plantain Chips





Ingredients:
Raw Banana Plantain/Nendhram Palam -2 sliced thinly 
Red Chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Salt- as required
Oil for frying
Water for soaking sliced banana plantains


Method:
  1. Take two raw banana plantains.Remove their skin and slice them into thin circles using slicer.



2.In a bowl,add water along with turmeric powder and salt Soak the sliced banana in water for 10 minutes.

3.Then place the banana pieces in paper and let excess moisture get absorbed by the paper.Then Fry them in hot oil and place it on a tissue to remove excess oil.



4.Add red chilli powder and required salt to fried chips.Toss well and serve



Bakery Style Soft ButteryTea cake






Ingredients:
Butter melted -3/4 cup(165 gm)
All purpose flour (Maida) - 1and 1/2 Cup(165 gm)
Sugar - 3/4 Cup(165 gm)
Baking powder -1 tsp
Salt - 1/4 tsp
Eggs- 3
Milk - 2 Tbsp
Vanilla essence -1/2 tsp
Baking pan 8 in x3
Butter paper

Method:
  1. Sift Flour and Baking powder and keep aside
  2. Beat Butter with sugar and salt well for atleast 1 minute until the mixture is creamy and soft.
  3. Add eggs one by one at a time and mix well.
  4. Add Vanilla essence and mix
  5. Add milk and mix well
  6. Add flour,baking powder to this mixture slowly and mix well till the mixture is soft and creamy.
  7. In baking pan ,add butter paper and apply smear butter on all the 4 sides
  8. Add batter to baking pan  and tap the pan to remove air bubbles
  9. Preheat oven to 350 f and bake for 20 minutes.Insert a tooth pick in centre of cake and if it comes out clean,cake is baked perfectly .





Ginger-Cardamon Tea

Yep its ginger cardamon tea packed with flavours!!!My mom used to make the best tea...I am always inspired by the way my mom cooks...yummy,delicious ,flavourful...I miss her and her lovely cuisines made with utmost care and love...This Tea recipe will be flavorful and am sure your taste buds will linger with  taste of GC tea!!:-)




INGREDIENTS:

Tea powder   -2 Tbsp
Milk              - 2 cups
Ginger           -3  tbsp grated
Cardamon      -2 whole or a few pinches of cardamon powder
Sugar             - as needed
Water             -1/2 cup

METHOD:
  1. Boil 1/2 cup of water.When it comes to a boil add grated ginger and cardamon powder.
  2. Simmer it for a few minutes and add tea powder and let it boil.
  3. When it starts boiling,add milk and sugar and  let it simmer for a few minutes.Strain them in a cup and enjoy...

Mixed Onion Tomato Chutney


           

Ingredients:
 Onions -1

Tomato - 1

Garlic -2 flakes

Curry leaves -5

Coriander leaves -1 stalk

Coconut-2 Tbsp

Red chilli -1

Sesame oil - 1 tbsp

Water -1/4 Cup



To Temper:

Mustard - 1/4 tsp

Urad dal -  1/4 tsp

Method:

1.Heat oil in a pan.Add onion,garlic,red chilli,curry leaves and tomato


 2.Saute well.Remove from pan and let it cool. 
  
                     

3.Grind in a blender with little water.

4.Add the Tempered ingredients to chutney





Serve with Idly,Dosa,Paniyaram

Strawberry Milkshake




Ingredients:

Strawberry -12
Sugar -1 tbsp
Milk -1 Cup

Method:

                  Wash Strawberries with water


Add strawberries to the blender 


Grind them once finely


Add Milk



Add Sugar and blend well

Serve and enjoy.



Rava Ladoo



INGREDIENTS:
Rava/Semolina-1 cup
Coconut(grated)-3/4 cup
Milk- 1/3 cup(add few tbsp more milk if you want very soft ladoos)
Powdered Sugar-1/4 cup
Cardamon powder - a pinch
Cashews - 7 to 8
Raisins- 8
Ghee-2 Tbsp
Powdered sugar for coating(opt)


METHOD:
  • Heat ghee in a pan and fry cashews and raisins till they turn a little brown.
  • Add the grated coconut and stir for a few minutes in low flame.
  • Now,add the semolina and saute them till it changes into brown colour.
  • Add powdered sugar and keep mixing it for 3 to 4 minutes.
  • Switch off the flame and add milk slowly to it.
  • Add cardamon powder to it.
  • Mix well till you are able to form dumplings out of it.
  • Serve and enjoy

Bread Pizza

Bread Pizza is an instant way to end the sudden craving for cheesy pizza .A few of these and that of your favourite toppings and in no time you will see yourself munching these cheesy goodness...:)



INGREDIENTS:

  • Bread slices - 5
  • Onion - 1(diced)
  • Capsicum - 1
  • Corn  - 1/2 Cup
  • Pizza sauce/Tomato sauce  - as needed 
  • Red chilli flakes - as needed
  • Italian seasoning - 2 to 3 pinches
  • Mozarella cheese - 3/4 cup
  • Butter for smearing the baking tray
  • Olives/Mushrooms or any toppings (opt)

METHOD:

  1. Butter the baking tray and arrange the bread slices.Spread a Tbsp of pizza sauce on  each slices.
  2. Add onions,capsicum,corn or any other toppings of your choice.
  3. Add  grated mozarella cheese on each bread slice.Sprinkle red chilli flakes and italian seasonings.
  4. Drizzle a few drops of olive oil.
  5. Preheat the oven to 375 - 400 degree Farenheit and bake it for 8 - 10 mts until the cheese melts and bread turns slightly golden brown...Munch homemade bread pizzas and Enjoy your day!!

SCRIBBLED NOTES:

  • Add cheese as per your liking
  • You can even cut the bread slices into circles if desired.
  • You can also use tawa to toast the bread slices.

Boiled Peanuts



Ingredients:

Raw Peanuts/Groundnut
Salt
Water

Method:
In a pressure cooker add water and add salt to it.
Wash raw peanuts and add it to the pressure cooker.
Boil for 7 to 8 whistles until peanut is cooked softly.
Serve as an evening snack










SCRIBBLED NOTES:
.Add Salt as per your requirement.
Don't fill pressure cooker with too much water.

Simple Corn Chaat/Masala Corn



A simple corn recipe with minimal ingredients!!
CAUTION:My whole family is addicted to this recipe and may cause the same to you too :)
Here goes the recipe......


Serves - 1
Time - 5 minutes
INGREDIENTS:

Corn kernels - 1 cup(I used frozen corn kernels)
Lemon juice - 1/2 tsp
Chaat masala - a pinch
Red chilly powder - 1/4 tsp
Turmeric  powder - a pinch
Pepper powder - a pinch
Salt- 1 tsp

METHOD:
  1. Add the corn kernels along with chaat masala,red chilly powder, turmeric powder,pepper powder and melted butter.
  2. Mix them well and microwave it for 1 miute or until the butter melts.Remove it from microwave,add the lemon juice with needed salt and mix well.Serve hot and enjoy!!
  3. In stove top method,Heat a pan and add butter.Adf steamed corn kernels and the masalas.Remive from heat and add lemon juice and salt.Mix well and serve

SCRIBBLED NOTES:
  • Adjust spice level as per your taste.
  • If using corn cobs,pressure cook them for  4 to 5 whistles in salt water.
  • Chaat masala has salt in it,so add salt accordingly.

Badam Milk /Almond Milk


Almond is packed with nutrients.Almonds are rich source of vitamin E,protein,Vitamin B,essential minerals and monounsaturated fat,one of the two fats which potentially may lower LDL cholesterol(Source:Wikipedia).
There is no story behind the making of Badam milk.I was thirsty and wanted to have some rich,creamy shake and thus sprouted the idea of Madam Badam milk :) Do try them and Enjoy your Summer!!


Serves : 2 small cups

INGREDIENTS:
  • Almonds/Badam - 25
  • Saffron strands/Kesar - 7 strands
  • Cardamon -  1(crushed)
  • Milk - 2 cups +1/2 cup
  • Sugar - 3 Tbsp
  • Rose essence - 1 drops
  • Condensed Milk - 2 Tbsp 

For Garnishing:
Sliced Cashewnuts /Pistachios/Badams
Saffron strands

METHOD:
  1. Soak Almonds in hot water for an hour.Remove the skin and grind them to a smooth paste.Add  1/2 cup milk to grind to a smooth paste
  2. Soak saffron in a Tbsp of warm milk.
  3.  Heat 2 cups of milk in a pan,let the milk boil for a few minutes till it becomes slightly thick,then add the condensed milk,almond paste and keep stirring them in medium flame till the paste blends well.
  4. Add the soaked saffron milk,cardamon powder,sugar and stir again till it becomes slightly thick.
  5. Add tose essence,give it a stir and switch off the stove.
  6. Garnish with sliced cashews,pistachios,badams,saffron strands and serve hot.
  7. Refrigerate for a few hours if you want to serve it cold.Enjoy!!


SCRIBBLED NOTES:
  • Serving with malai or cream of milk formed makes it more richer
  • Adjust sugar as per your taste
  • Adding rose essence and condensed milk is optional,but it enhances the taste .
  • Badam Milk thickens by time
  • In some shops,they add Almond essence
