Puttu/Kerala Style Puttu





INGREDIENTS:
Rice Flour - 2 Cups
Water - 1 Cup
Salt -1/2 tsp
Coconut -3/4 Cup, grated
Cardamom -2 ,crushed
Ghee -1 tsp
Jaggery/Sugar - as needed

Utensils:
Puttu maker or Idly Steamer.

I used puttu maker to make puttu since its easy and mess free.If you dont have puttu maker,use a wet cloth and add the puttu flour and steam it in a idly steamer .


METHOD:

1.Fill 3/4 of the puttu maker with water and allow it to boil.



2.Keep the puttu maker and a plate for serving puttu ready


3.In a bowl add 2 cups of puttu flour.

                       

4.Add Salt

                     

5.Add Crushed Cardamom and mix well.

                       


6.Mix well.

                    

7.Add Ghee.


8.Add water and mix well little by little



9.Mix well.



10.You should be able to make a shape out of the flour and it should crumble up easily.




11.It should crumble easily.



12.Mix well without any lumps.



13.Keep the puttu maker ready.


14.Fill it with rice flour and coconut


15.Fill it fully.


16.Now its ready to steam



17.Keep it in the puttu steamer and boil it for 7 to 10 minutes until you see vapour coming out from the puttu maker holes.


18.Puttu is ready.




19.Serve it with banana and jaggery or with kadalai curry.

Upma/Rava Upma



                         

INGREDIENTS:

Rava -1 cup
Water - 2 and 1/2 cups

To Temper:
Coconut oil -1 Tbsp
Mustard -1/2 tsp
Urad dal - 1 tsp
Channa dal -1 Tbsp (soaked for 10 minutes)
Green chilly -2
Curry leaves -1 Sprig
Onion -1 
Salt 


METHOD:

First,Roast rava without oil  and keep it aside.


Heat a pan and add coconut oil.Then add mustard,urad dal,curryleaves and green chilly.


Add Chopped onion and saute till it becomes transulent


Add water and required salt and let it start boiling


When water starts boiling,add rava and  mix well till the water gets absorbed.Adjust water quantity as required.


Serve hot with coconut chutney
