Idly/Dosa Batter - How to Make Batter for Soft Idly?


INGREDIENTS:

Raw Rice/Pacharisi - 4 Cups
White Urad Dal -1 Cup
Fenugreek Seeds - 1 Tbsp

METHOD:

  1. Wash Raw rice with water well 4 to 5 times till the water is clear.
  2. Wash Urad Dal separately in water.
  3. Soak Rice , Fenugreek seeds  and Urad Dal separately in water for 8 hours or overnight.

4.Grind Soaked Urad Dal well and add little water if needed to make a fluffy Urad Dal batter.Dont add too much water.Urad Dal batter should be fluffy.Remove it from the grinder and keep it aside.





5.Grind Raw Rice until it's smooth.Add water little by little to grind the rice.

6.Mix Urad Dal batter with raw rice and beat them well at least for 10 minutes.Beating them well makes the batter more aerated and helps in easy fermentation.


Keep the mixed batter in a warm place for 7 to 8 hours or till batter ferments.
When it ferments mix well once and use else you can keep it in fridge.



7.Add salt to the batter before using them.Make Hot idlys and Dosas and serve with sambar or favorite chutneys

Nendram Palam Chips/Banana Plantain Chips





Ingredients:
Raw Banana Plantain/Nendhram Palam -2 sliced thinly 
Red Chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Salt- as required
Oil for frying
Water for soaking sliced banana plantains


Method:
  1. Take two raw banana plantains.Remove their skin and slice them into thin circles using slicer.



2.In a bowl,add water along with turmeric powder and salt Soak the sliced banana in water for 10 minutes.

3.Then place the banana pieces in paper and let excess moisture get absorbed by the paper.Then Fry them in hot oil and place it on a tissue to remove excess oil.



4.Add red chilli powder and required salt to fried chips.Toss well and serve
