Puran Poli/Poli Recipe/How To Make Puran Poli?



             

INGREDIENTS:

Maida/All purpose flour -1 cup
Pooranam 
Sesame Oil/Ghee - 2 Tbsp + 3 Tbsp
Turmeric -1/4 tsp
Cooking Soda - 1 pinch
Salt - as required
Water - as required
      
  Ingredients for Stuffing/Pooranam:

   Channa dal -1/2 Cup
   Jaggery -1 Cup
   Coconut grated - 1/2 cup 
   Cardamom powdered - 1 pinch
    Salt - a pinch
    Ghee - 2 Tbsp
     
  1. Soak channa dal for 2 hours and Pressure cook channa dal for 3 whistles.When it cools down,mash it well or grind it to make it into a paste.Keep aside.
  2. Boil water in a pan and add jaggery to it.Let it dissolve completely then strain it to remove any impurities.Jaggery syrup is ready.
  3. Heat a pan and add filtered jaggery syrup.Let it boil and become frothy.Then add ground dal paste and coconut.Stir continuosly without any lumps.Add cardamom powder and mix well.
  4. Stir till  the mixture become thicks and leaves the sides of the pan.Now the stuffing is ready.

METHOD:

1.In a bowl add all purpose flour,salt,turmeric,cooking soda and oil and mix well.

                             

2. Add water little by little and mix well.Knead well for atleast 10 minutes to make the dough little loose and not sticky.Smear oil over the dough and keep it aside for 2 hours.

                             

3.Make equal sized balls.

                              

4.Keep the stuffing ready and make it into small balls .

                             

5.Flatten the dough ball to a thick circle and place the poornam ball in the middle and cover it.Pinch off any excess dough.Flatten it again using your fingers.Use ghee or oil to flatten it so that the dough spreads evenly and covers the stuffing.

                           

6.Heat tawa .Transfer the flattened dough and cook on both sides toll golden brown spots appear on both sides of the poli.Smear ghee on each side while cooking.

Thandu Keerai Kootu/Keerai Kootu-




INGREDIENTS:

Thandu Keerai - 1 bunch
Shallots - 5
Garlic - 4
Moong dal/Paasi paruppu - 1/4 cup
Sambar powder -2 tsp

To grind:
Coconut piece - 1/4 cup grated
Rice flour -1 tsp
Water to grind

To temper:
Oil - 1 tsp
Mustard - 1/2 tsp
Urad dal-2 tsp
Cumin seeds- 1 tsp
Ghee -1 Tbsp

METHOD:

1.Pressure cook moong dal,shallots and garlic for 3 to 4 whistles.




2.Soak Keerai in salt and turmeric water and wash it.


3.After pressure releases,add washed keerai to cooked dal.


4.Let keerai cook well.

                  

5.When it is cooked well,add masalas and salt.


6.Add ground coconut paste


7.When it boils ,add ghee and mix well.


8.Temper with the tempering ingredients.


9.Add it to keerai dal mixture and mix well.


Serve with rice and papad.
