Simple Beetroot Rice



Serves :4

INGREDIENTS:
Beetroot small,chopped -2
Sesame Oil -2 Tbsp
Mustard - 1/4 tsp(optional)
Urad dal - 2 Tbsp
Channa dal -2 Tbsp
Jeera -1 tsp
Curry leaves -1 Sprig
Red Chilly -2
Onion,chopped -1
Sambar powder -1 and 1/2 Tbsp
Red chilly powder-1/4 tsp(optional)
Coriander powder -1/2 tsp
Salt 
Water -as needed
Cooked Rice -3 Cups

                                METHOD:

            1.Heat Oil in a pan and add mustad,urad dal,jeera,channa dal,red chilly and curry leaves.



                                         

2.Add Chopped onion and saute well.

                               


                          

3.Add Chopped Beetroot and mix.Sprinkle little water and pressure cook for 3 whistles in medium flame.


                      


4.When pressure is released,open pressure cooker and add sambar powder,red chilli powder and coriander powder along with salt.Let the masalas cook well for 2 to 3 minutes.

                   

5.Add Cooked Rice


                 

6.Mix well and serve
                  

I  had with mixed vegetable pickle :)



Kesari/Rava Kesari






INGREDIENTS:
Rava - 1 Cup
Cardamom powder -2 pinch or 1 cardamom crushed
Sugar - 1 cup and 3/4 cup +2 Tbsp
Water
Cashews -1 Tbsp
Raisins -1 Tbsp
Ghee - 1/4 cup+1 Tbsp


METHOD:

Heat 1 tbsp ghee and roast cashews and raisins.Keep it separately



In the same pan roast rava on medium flame.Dont overburn the rava.


The rava is slightly roasted


Keep the roasted rava and cashews,raisins in a separate plate

Boil water



Add roasted rava and let it cook for 3 to 4 minutes .



Add sugar and mix well.Let it combine well



Add ghee and mix well


Add few pinch of food colour


Mix well

Add roasted nuts 

Rava kesari is ready


Serve hot and enjoy!

Beach Style Sundal Gravy









INGREDIENTS:

Dry Green Peas /Vatana Beans- 2 Cups
Oil -1 Tbsp
Green chilly -1
Ginger Garlic paste -1 Tbsp
Onion -1 ,chopped
Tomato -1,chopped
Raw Mango - 1/2 piece
Red Chilly powder -2 tsp
Turmeric powder -1/4 tsp
Garam masala -1/2 tsp
Chaat masala - 1 tsp
Lemon -juice of 1/2 lemon 
Salt
Coriander leaves

For Garnishing:

Onions chopped
Coriander leaves

METHOD:

1.Soak Dry Green Peas for 8 hours or overnight.In a pressure cooker add required water and salt and cook on medium flame for 5 whistles till dry green peas get cooked.Keep it aside.


2.Heat Oil and add green chilly,ginger garlic paste, chopped onion and tomato.




3.Add cooked green peas along with water.



4.In a mixie jar add cooked peas and grind them .


5.Keep the ground paste aside.


6.Add red chilly powder,turmeric powder garam masala and cook till raw smell goes off.



7.Add chopped coriander leaves 



                                                         8.Add ground paste.



9.Squeeze lemon juice 




10.Check for salt.

                                         
                                      
                                         11.Garnish with chopped onion,coriander leaves and a slice of lemon wedge

                                

12.Enjoy your Beach Style Sundal Gravy.


Kovakkai Rice/Tindora Rice

                                        


                                          


INGREDIENTS:

Kovakkai 
Peanuts -1 Tbsp
Channa dal -1 tsp
Urad dal-1 tsp
Curry leaves-1 Sprig
Sesame Oil -1 Tbsp
Sambar powder -2 tsp
Red Chilly Powder -1 tsp
Salt - as required
Lemon juice - as required
Cooked Rice 


METHOD:

1.Heat Oil in a pan and add urad dal,channa dal,red chilly and curry leaves.



2.Add finely chopped kovakkai.Cover and cook .Sprinkle little water if required


3.Add sambar powder,red chilly powder and salt.



4.Mix well.Sprinkle little water if needed so that the masalas mix well.

                  

5.Add Cooked rice


6.Mix well



7.Add lemon juice.


8.Serve Kovakkai rice with papad and pickle.






Puttu/Kerala Style Puttu





INGREDIENTS:
Rice Flour - 2 Cups
Water - 1 Cup
Salt -1/2 tsp
Coconut -3/4 Cup, grated
Cardamom -2 ,crushed
Ghee -1 tsp
Jaggery/Sugar - as needed

Utensils:
Puttu maker or Idly Steamer.

I used puttu maker to make puttu since its easy and mess free.If you dont have puttu maker,use a wet cloth and add the puttu flour and steam it in a idly steamer .


METHOD:

1.Fill 3/4 of the puttu maker with water and allow it to boil.



2.Keep the puttu maker and a plate for serving puttu ready


3.In a bowl add 2 cups of puttu flour.

                       

4.Add Salt

                     

5.Add Crushed Cardamom and mix well.

                       


6.Mix well.

                    

7.Add Ghee.


8.Add water and mix well little by little



9.Mix well.



10.You should be able to make a shape out of the flour and it should crumble up easily.




11.It should crumble easily.



12.Mix well without any lumps.



13.Keep the puttu maker ready.


14.Fill it with rice flour and coconut


15.Fill it fully.


16.Now its ready to steam



17.Keep it in the puttu steamer and boil it for 7 to 10 minutes until you see vapour coming out from the puttu maker holes.


18.Puttu is ready.




19.Serve it with banana and jaggery or with kadalai curry.
